Is a high-quality oil that the joins tradition of things being done properly with the most advanced techniques of cultivation and production, a result of many years of experience.

This Oil is worked all year round by our field technicians. At each point in the production process from pest and fungi control, through to the irrigation, fertilisation and harvesting process we use the latest technological advances. By doing this we can produce the best healthy EXTRA VIRGIN OLIVE OIL.

We have developed a process that respects and cares for the tree and which determines the final quality of our oil. We select a wide range of indigenous olives from the Cádiz Mountains of the Lechín, Verdial, Manzanilla, Hojiblanca and Picual varieties. From this range we create a unique oil with a smooth aroma, and a fruity and exquisite flavour, which makes it very agreeable to the palate.

Study of the healthy composition of the Extra Virgin Olive Oil Señorío de Villamartín

According to the European Union Directive 432/2012 those olive oils containing a phenolic concentration, (hydroxytyrosol, tyrosol, oleocanthal, oleacein, oleuropein aglycone and ligstroside aglycone) of higher than 250 mg/kg can include health claims recognised by EFSA (the European Food Safety Authority).
This health claim indicates that appropriate consumption of this oil (a recommended daily amount of 20g) provides health benefits based on preventing lipid oxidisation in the blood, one of the main mechanisms in the development of cardio vascular diseases.
Regarding the phenolic composition, it is necessary to take into account that this affects the organoleptic properties, above all the indications that point to the sharpness or bitterness.

At the request of the Spanish Association of Municipalities of the Olive Tree, ), our brand Señorio de Villamartín has been analysed by the Analytical Chemistry Department at the University of Cordoba. In said study, our oils received very good results:

The daily consumption of the Señorio de Villamartín Extra Virgin Olive Oils provides the following levels of hydroxytyrosol, tyrosol, and derivatives:

This amount is much higher than what is established in the European Union Directive 432/2012 (5 milligrams of daily consumption), based in the Health Claim of the European Food Safety Authority (EFSA).

Therefore, the daily consumption of the abovementioned amount of 20 grams of Señorío de Villamartín and Hacienda Los Horgazales Extra Virgin Olive Oils, provides a higher proportion of health benefits and is recommended by the European Food Safety Organisation, since it may prevent cardiovascular illnesses due to its capacity to protect lipids in the blood from oxidisation.
